Any information on high fat, low cal/carb options would be amazing.

You can't really do high fat/low cal at the same time because fat has almost twice as many calories per gram as carbs and protein. The closest I can think of is something like nut butter on celery, because celery is mostly water and fibre and thus is "heavy" enough to help stretch out the fat calories over a bigger weight total (of food).

I'm dealing with trying to up my fats and I've been looking for foods that have a good fat:calorie ratio to add to my diet.

    I've come up with:
    - Avocado
    - Hard boiled eggs
    - Hummus (different brands are different, I love this one from Whole Foods that is called Cava Mezze)
    - Almonds - 100 calorie bags
    - Nut butters
    - Full fat yogurt - plain ones will yield you the most fat for the fewest calories because you don't have the calories from sugars
    - Goat cheese
    - Turkey bacon

Hope that helps! I've found that fat definitely keeps you full so more calorie dense foods like the above are filling even if they look smaller in volume....

My suggestions are same as jett254 with addition of coconut oil and/ or olive oil.
