400 Cal. Turkey Enchiladas

Delicious! Realized I had some expiring ground turkey in the fridge with some barely-alive broccoli and whipped this up. Definitely not "authentic" but it was satisfying and tasty. More sauce would be yummy, but I was trying to manage calories. BTW, I didn't make this with onion (I didn't have one on hand) but it was still good.

Serves 4

-4 whole wheat tortillas
-1/2 an onion
-16 oz. cooked 99% lean ground turkey
-1cup warmed enchilada sauce (I mixed up some marinara with chili powder, cumin, cinnamon, onion powder, garlic powder, basil, etc.)
-2 cups cooked, rough chopped broccoli
-1 cup lite cheddar/jack cheese blend

Preheat oven to 400

1. Lay 2 tortillas in 9x9 pan
2. Pour the turkey on top
3. sprinkle half the cheese on the turkey
4. Layer on the brococoli
5. Lay the remaining 2 tortillas on top
6. Spoon the sauce on top
7. Sprinkle the rest of the cheese on top
8. Bake for 15 min.

1600 Calories total...I ate 1/4 of the pan.
