I should be introducing some strength training into my cardio- so if I do it once a week, would that even make a difference? Or should I be doing it more??

From what I've read you should be lifting 3 days a week. I currently lift heavy 3 times a week and have one day of endurance training.0

When I first started, I did strength training twice a week (circuit/full body). Combined with a good diet and some cardio on 2-3 other days, I started experiencing/seeing significant progress in my strength gains within 4-6 weeks. Those gains that come from someone new to resistance training are pretty remarkable. Eventually, you may decide to increase that by a day or two, but I think at least two days a week will be sufficient for a fitness program.
Good luck! I am hoping you really enjoy strength training as part of your fitness lifestyle!0
