I have recently become exposed to thai foods. A local health food store has a woman who cooks there once a week (probably illegal but food is wonderful). Anyway you can eat immense portions with very few calories. I use the rice noodles and lots of vegetables...book Chou, Chinese cabbage, mushrooms and cilronto. Make the broth (canned vegan or chicken or miso) fry in a tiny bit of oil some garlic. Put your vegas in a bowl raw (but for the mushrooms cook them a bit with the garlic. Put juice of one lime (or to taste, in with the broth and pour over the vegas. Stir in noodles, throw in a small amount of bean sprout athen garnish with sliced green onions, a bit of crushed peanuts and some sesame seeds if you have them. I like to mix in some Chinese hot sauce ans then some rice vintager. I love this but I know it may not be for everyone. Play with the vintager, lime and hot sauce till you get the flavor you want. I cut up the vegas and put them in the fridge so I can make it in a snap. Hope you're enjoy it!
