Post you egg creations here for me. Breakfast, lunch, dinner, snacks. If it uses lots of eggs I want to know about it. My chickens are in overdrive and my fridge is filling up. I can't sell them fast enough!

    Frittatas, tortilla espanolas, egg salad, eggs benedict, all sorts of baked goods etc etc

    Aside from the poached, fried, boiled, deviled, frittata, quiche and custard ideas did you know you can freeze them? When my chickens are in overdrive I blend the eggs all together in the blender on low so they're just combined. Then pour them into ice cube trays. For the trays I use you need two cubes to equal one egg. When they're frozen just pop them out of the trays and into ziplock baggies to store in the freezer. They can be used in most all the stuff listed above with no problem and they're fine in baking too. Just give them some time to thaw before you need them. :)

    You could try to make Angel food cake the recipe from good eats uses 12 egg whites

    If you want to use the yolks maybe try and make some custard recipes like creme brulee.

  • Deviled egs or egg salsd made with homemade mayonnaise.

    1egg

    1/2 teaspoonminced garlic

    1 tablespoonlemon juice

    1 teaspoonprepared yellow mustard

    3/4 olive oil

    salt and pepper to taste



    Combine the egg, garlic, lemon juice and mustard in the container of a blender or food processor. Blend until smooth, then blend on low speed while pouring oil into the blender in a fine stream as the mixture emulsifies and thickens.

    This recipe contains raw eggs. We recommend that pregnant women, young children, the elderly and the infirm do not consume raw eggs.

    Another idea would be make Challah bread the following recipe uses 5 eggs

    and then use that bread to make french toast uses up more eggs, a tip would be cut the bread and let it dry out before you use it to make french toast you can cut it up the day before and let it sit out to get a little stale before soaking up the egg mixture it will hold more of the egg.

    You can actually freeze eggs if your worried about them going off before you can eat them..Just make sure you you whisk them up first and put them into ice cube trays 1 cube= one egg

    Pop a couple out for breakfast the night before and they should be ready to go in the morning

    Or make muffins, Any veg cheese ham etc etc and i crack on egg into each muffin and just give them a quick stir with a fork before baking 12 muffins = 12 eggs

    Thanks for the great ideas guys. Keep 'em coming. I had forgotten about freezing them. Guess that would make up for when the stop laying during our cold winters.

    So far I've done hard boiled, deviled, egg salad, chili rellenos, breakfast burrito, breakfast sandwhich, and trying to resist baking things I'll just sit and eat ;) Still have 4 dozen in the fridge...

    If you have poultry already, try ducks. I'm getting 5 or 6 eggs every day from my Muscovies. Delicious, OMG. Sooooo goood, I'll probably never eat a chicken egg again until the ducks quit laying in late fall.

    I combine egg whites (and a couple yolks for flavor) with chopped spinach, tomatoes, bell peppers, scallions and feta cheese, pour it all in a cake pan or muffin tin, and bake at 350 until done. You can do pretty much anything with this - broccoli and cheddar is also good.

    And... This dish freezes nicely!

    Veggie EggWhite Omelet: which consists of
    3 egg whites beaten with 1/2 tsp no salt seasoning & 1/4 tsp red pepper flakes
    1/2 cup diced zucchini
    1/2 cup diced red peppers
    1 T sundried tomatoes in olive oil
    2 c fresh spinach
    1/4 c scallions
    1/4 c feta cheese
    Saute tomatoes with scallions/diced veg in non stick pan,
    When veg are slightly soft, add spinach to wilt
    Reserve veg mix to bowl
    Coat non stick pan with 1 tsp EVOO
    Add beaten egg whites and swirl in pan to cover.
    Let egg whites set
    Sprinkle w feta cheese, then reserved veggies.
    Roll into omelet, slide onto warmed plate.

    I add 2 T huy fong chili sauce on top, sounds like a lot but the feta cheese tempers the heat.

    SHUT THE FRONT DOOR!!!!! I can now sleep, I've learned something new & wonderful today. (Though I burn through so many eggs I'll likely never need this, darn! Lol.)

    This is a bit of an old thread, but I have chickens of my own so can relate.

    BUT if you have chickens you should know that if you do not wash the eggs, you do not need to refrigerate them and they stay good for at least a couple of months on the counter. I know this sounds crazy but it isn't. The eggs have a natural antibacterial seal called the "bloom" on them. If you leave it intact, they are protected. If they get wet at all, or have any cracks, then the seal is broken and you need to refrigerate and use them. If they are super dirty and it bugs you, you can dry brush them clean with some light sandpaper, but I rarely bother unless one is super poopy.

    I've had eggs on my counter that I've lost track of how old they are. I've been doing this since my girls got old enough to lay in April of last year and I've encountered ONE bad egg in the entire time (I think it had a small crack in it). It was very obviously bad when I cracked it (black yolk) so no risk of eating it and getting sick.

    This will help keep your eggs longer without sacrificing the awesome fresh flavor by refrigerating or freezing them.
