Low sodium and Low GI?

I have been successful with lowering my sodium intake (and thus my blood pressure) through diet and exercise. But since I have fibromylagia (and probably arthritis in my knees...joy), the doctor suggested I try a low gylcemic diet as well.
Changing sweetners, no sweat. I already went whole grain to cut back on sodium. I prefer brown rice and whole wheat flour to their processed counterparts. Wasn't happy about cutting back to one banana a day, but bought more apples. I have plenty of veggies and love to eat them.
I have plenty of time to cook, but a very small food budget. Especially since I have to buy food for two completely different diets, as my son is a picky eater with high caloric needs.
The problem is foods to fill out the caloric needs. Most dips and other fillers are so painfully high in sodium. I have food allergies, specifically citrus fruit. Anything with cumin gives me a sore throat and makes me lose my voice for three days (no idea why). Peanut butter is okay, but high enough on the GL that I can't just scarf down peanut butter. Cheese is painfully high in sodium, so it's pretty much out.
Anybody know any low sodium, non spicy dips for my veggies and fruit. I already added greek yogurt, but I am sort of stuck here. Any and all suggestions would be very welcome. The low GI websites have been less than helpful. And contradict each other. And I can't speak to the nutritionist until July.
