Hi everyone! Though I'd send this request out to all to find out if there are any good Chicken recipes out there! Wings/Breast/Legs/Thighs. All are welcomed.....

    I just bought some boneless, skinless chicken thighs.

    I sprinkled garlic salt, onion powder, seasoned salt, chili powder and worchesteshire sauce on both sides and bake at 350 for 20-25 mins.

    They're pretty good!

    Umm.. why so much chicken? What about fish, prawns, crabs, lobster, yabbies, oysters, mussels, calamari, octopus, cuttlefish, sea urchin, eel, pork, wild boar, beef, lamb, veal,croc, alligator, elk, emu, ostrich, turkey, llama, kangaroo, buffalo, frogs, snails, etc etc.. then there are all the vegetarian versions. I'd go nuts eating the same meat all the time.

    Chicken is good because it's relatively low in calories, has lots of protein, and is filling. It's an easy go-to type food that can be used in about a gazillion different ways.

    2 parts raw honey
    2 parts lemon juice
    1 part balsamic vinegar

    Marinade any meat for approximately 2 hours and cook either on the stove, in the oven, or on the grill (my favorite)! I make boneless skinless thighs this way several times a week. SO GOOD

    A little olive oil, slices of citrus and fresh herbs, close in aluminum like a package. Hubby and 5 yr old son are picky eaters but they love it

What about fish, prawns, crabs, lobster, yabbies, oysters, mussels, calamari, octopus, cuttlefish, sea urchin, eel, pork, wild boar, beef, lamb, veal,croc, alligator, elk, emu, ostrich, turkey, llama, kangaroo, buffalo, frogs, snails, etc etc.. then there are all the vegetarian versions.     chicken breast baked with a topping of (tablespoon of grated wholeal bread mixed witholive oil / low fat spread, parsley and garlic

    any type of chicken skewers with peppers, mushrooms, onions, pineapple

    chicken, mango and avocado salad with spinach

    stir fried chicken breast with sriracha sauce (or hot sauce) with veggies and side of quinoa

    chicken stew with chopped tomatoes, peppers, onions and lots of paprika

    Blend 4 cloves of garlic, 2 deseeded green chillis (or more if you like it hot), juice of 3 lemons, big chunk of ginger, a little oil.

    Marinade chicken legs in about 2/3 of this mix, save the rest....

    Brown off the chicken in a skillet / pan

    blend a bunch of coriander with a little tomato paste, couple spoons of water, and the rest of the mixture

    Add to the pan, simmer until the meat is cooked. Last 5 minutes add some low fat natural youghurt to cream it up a bit.

    Serve with rice and yoghurt with mint and coriander.

    Take a skinless chicken breast, either fry in low-calorie cooking spray or grill with some garlic and parsley, then top with a thin slice of blue cheese and jalapeno peppers and finish under the grill to melt the cheese a little. Quick, easy and delicious. It also works brilliantly for steak.

    PARMESAN CHICKEN BAKE

    INGREDIENTS:
    6 chicken breasts
    ... 1 C light mayonaise or greek yogurt (I have done 1/2 of each as well)
    1/2 c fresh parmesan cheese, plus more for the top
    1 1/2 tsp seasoning salt (This is NOT regular table salt. It is a mixture of seasonings)
    1/2 tsp pepper
    1 tsp garlic powder
    DIRECTIONS :
    1. Preheat oven to 375 degrees and spray the inside of a 9x13 glass pan. Lay the chicken inside the pan.
    2. Mix together the remaining ingredients and spread evenly over each piece of chicken, being sure to cover all the exposed raw meat (so it doesn't dry out.) Sprinkle on a bit more fresh parmesan over all the chicken.
    3. Bake uncovered for 45 minutes. This dish is even better the next day, so just reheat in the microwave!
    **Some have commented that this dish was way too salty. Please be sure you are using fresh parmesan cheese, not the stuff from a can. Also, use seasoning salt, NOT table salt. I have made this many, many times and have never had trouble with the salt level. If you are worried, use less but please don't make substitutes

    For some people, it's just cheaper (assuming that's why many people use chicken so much ). As a family of 6, getting a bag of chicken lasts longer vs. all those others ;)

    Hi! Here are a few of my current favorites. They are all at least moderately healthy, in my opinion.

    1) Breaded chicken:
    1 lb chicken breast, cut into 4 pieces and pounded to about equal thickness
    1 egg (or egg white)
    1/4 cup panko bread crumbs
    1/4 cup italian seasoned bread crumbs
    salt and pepper to taste

    Season chicken with salt and pepper. Whisk egg (or egg white). Dip chicken pieces in egg and coat with breadcrumbs. Bake for ~30 minutes at 350 degrees. I usually top with cheese and throw it back in the oven for a few

    2) BBQ chicken "wings"

    5) Sauteed chicken breast: I add olive oil to a pan and make sure it's very hot before adding the chicken. I season the chicken with lemon juice, garlic powder, salt, pepper, and some south west seasoning (just sprinkled on the chicken; I don't have exact measurements).

    My go-to recipe when I can't think of any other way to cook chicken - I take chicken thighs that I buy fozen in the bag from Wal Mart, thaw and lay out on a cookie sheet, spray with olive oil cooking spray and sprinkle with fresh thyme, ground sage and a little seasoned salt. Bake at 375 til done (about 45 min.) If there are any leftovers I make chicken salad for lunch the following day - a little mayo, curry powder and either sliced green grapes, or pear or apple cut into chunks.

    i have boneless skinless breasts almost every day. i cut them in to cubes and sprinkle a bit of a dutch spice called Kip Kruiden (i'm not sure where you can find this if you're not in the Netherlands? Perhaps amazon?) and cook for about 1-2 minutes on each side (or until they're cooked about 1/2 through). My favourite veggie to eat with this is spinach with garlic! It's delicious and low calorie and healthy. :-)

    Take 4 large boneless skinless chicken breasts and place in slow cooker. Add 1 12oz bottle Franks Buffalo Sauce and 1 packet Hidden Valley Ranch dressing mix and stir. Cook on low 6-7 hours, take out chicken and shred, put back in slow cooker for another hour. Devour :-)

    "Mexican" Chicken Bake

    Take PRE-COOKED chicken breasts and:
    - 3 whole tomatoes (pulp and all). You can also replace this with canned tomatoes, if you like.
    - cayenne pepper (~ 1tbsp)
    - chili powder (~1 tbsp)
    - garlic powder (to taste)
    - cumin powder (~ 1tsp)
    - jalepeno peppers (usually 2 medium sized ones)
    - onion (I use 1/2 onion)
    - 1/2 - 1 bell pepper, depending on size
    - 1 cup black beans
    - 1-2tbsp chili paste

    Add everything together in a bowl, mix well, and pour over the chicken breasts in a casserole-type dish. Optional: sprinkle a little cheese on top. Bake at 350F until cheese melts or 10-12 minutes (depending on your over).

    Chicken Paprikash

    1 tbs extra virgin olive oil
    1 lb boneless chicken thighs or breasts, sliced thinly
    1 small onion, diced
    small 3 cups tomato juice
    3 tbs sweet or smoked paprika
    ½ cups nonfat Greek yogurt

    Directions
    1.Heat the oil in a large skillet over medium high heat; add chicken and cook, stirring occasionally, until browned on the outside.

    2.Add onions and continue to stir and cook until onions have softened slightly, about 5 minutes.

    3.Add tomato juice and paprika, bring to a boil, reduce to a simmer, and cook, uncovered, until tomato juice reduces and thickens, about 20 minutes.

    4.Turn heat off, stir in yogurt, and serve over brown rice or whole wheat pasta.

    I do buffalo chicken salad. Just saute the chicken until done, add hot sauce (preferably Frank's Red Hot or Cholula), chop and add to chicken with some blue cheese crumbles. Or you can do the 'crispy' version: http://www.canyoustayfordinner.com/2010/11/05/crispy-buffalo-chicken/

    I cut up 3-4 chicken breasts into chunks, and bake them with salsa (pick your favorite, I prefer peach-pineapple salsa but I have used black bean and regular salsa as well). You can add additional veggies as desired (I usually add cut up peppers, onions, mushrooms). Serve over brown rice. I top it with a little shredded cheese :]
