Tofu help

Okay, to those of you who use tofu...I use it occasionally when I find a yummy recipe. I had an article in cooking light that explained how to press the tofu to elimate water before preparing, and i lost the darn thing and cannot find it online. Anyone care to elaborate for me on this?

Sure! I just made this and portioned it out for a few lunches. I added a ton more curry and also used shelled edamame , sliced ginger, and carrots in addition.

I just put it between 2 plates with clean towels or paper towels and put a book or some cans on top to add weight.0

Dave's Teriyaki tofu (from the biggest loser cookbook)
1 pkg.(12 oz.) light firm tofu, draned and cut into 1" cubes
3 whole green onions, finely chopped
1tsp. minced fresh garlic
1tsp. minced fresh ginger
1/2 tsp. extra-virgin olive oil
1/4 tsp. hot sesame oil
1 cup chopped fresh broccoli
2 Tbsp. light teriyaki sauce
1/8 tsp. red-pepper flakes, or more to taste
Place a nonstick wok or skillet over hight heat until it is hot enough for a spritz of water to sizzle on it ... With an oven mitt, briefly remove the pan from the heat to lightly mist with olive oil spray. Heat for 3 seconds. Add the tofu, green onions, garlic, ginger,olive oil and sesame oil. Cook, stirring often, for 3 minutes. Add the broccoli. Cook stirring frequently for about 12 minutes or until the tofu is browned on all sides . Stir in the teriyaki sauce. Season with pepper flakes. Cook for 30 to 60 seconds, or until the sauce thickens slightly. Spoon onto 2 serving plates. Serve immediately .
MAKES 2 SERVINGS
Per Serving : 118 calories, 13g protein, 10g carbs, 3g fat(less that 1g saturated),0mg cholesterol, 2g fiber, 597mg sodium

place a magazine or thin book under a plate to angle it slightly. Place the tofu on the higher side of the plate, place another plate on top of the tofu and place a can on the plate, a regular 15 oz can not a really heavy one. let drain about 30 min. you will see all the liquid that drained off on the lower side of the bottom plate. After 30 min, pat the tofu dry and go on with your recipe. This is essential if you are going to marinate and grill the tofu, which is deliciuos0

I thought it was as simple as that but couldnt remember how long (was torn between 30 minutes and overnight lol). Thanks for the recipe as well! I am just trying to incorporate different proteins into my diet.0
