Can You Help Me?

Right...Okay, I need help.
I'm 140 pounds and want to get down to around 110.
I would normally eat around 1500 calories, then I exercise and end up burning around 300 calories-ish, then I get worried that my body is going to go into starvation mode, so I eat more, and the food I've consumed is high, but my NET is low.
I lost a few pounds then the diet slipped and I piled it back on again in a day, so then I thought I was restricting myself too much and...agh.
I don't know if I'm doing the right thing...
Can you advise me on the best way to go about this?
