I figured out the macros on this. Someone else already noted about 320 cals per serving, if you figure 8 servings. Mine came out a little more, like 340 (again, not counting garnish or rice), but you're in this ballpark. Carbs about 13 g, fats about 13 g, proteins about 41 grams.
Now...gonna get the one or two ingredients I don't have and make this one. It sounds delicious.0 -

I make this fairly frequently. It takes absolutely no effort and it's really pretty good.
Chicken Tacos
Boneless, skinless chicken tenders or breasts
Chicken broth (I use reduced sodium)
Taco seasoning packet (I use reduced sodium - you could certainly add your own spices)
Fling it in the crockpot until the chicken is done. Obviously add lettuce, cut up fresh tomatoes, salsa, reduced fat shredded cheese, or whatever else you like on your taco. We usually skip the shells and just make gigantic salads.
I intentionally make extra chicken, and use the leftovers either for
Chicken Quesadillas
Tortillas (I substitute Flatout flat bread)
Refried beans (I use low sodium refried black beans)
Cheese (usually low fat shredded taco cheese)
Put the tortilla on a cookie sheet Spread the refried beans on the tortilla. Put on shredded leftover chicken and taco cheese. Either fold it over or put another tortilla on top. I spray the cookies sheet with cooking oil and a quick spray on top of the quesadilla. Place it in the oven or the broiler until the cheese is melted. If you broil it, watch it closely.
Use salsa, guacamole, sour cream or whatever for garnish.
If I don't use the leftover chicken for quesadillas, I use it to make Mexican Taco Pizzas
Leftover shredded taco chicken
Tortillas (usually Flatout)
Refried beans (low sodium black beans)
Cheese (low fat shredded taco cheese)
Fresh chopped tomatoes (save some from yesterday)
Green onions
Olives (I don't like them or use them, you could)
Bell Peppers (a little bit finely chopped)
Salsa (the mango salsa from Costco is amaaaazing)
Spray the cookie sheet with cooking oil. Lay the tortilla flat on it. Spread with refried beans. Spread salsa for sauce. Add shredded chicken. Top with cheese and other toppings. Put it in the oven or broiler until it's warm and the cheese is melted. Watch it if it's in the broiler.
I did not give calories. It really depends on how much chicken and cheese and what sort of tortilla etc you use. They're embarrassingly easy, take no effort, are fairly healthy, and all taste really, really good.0 -
