I made lasagna roll ups, and I thought I had made enough sauce and filling for 16 roll ups- but I only got 12 so now I have about 6 cooked noodles left. I really hate to waste them. Any ideas?

You can cut them into squares and serve with sauce and tiny tiny meatballs so the effect is like an undone ravioli.
You can also cut them in shapes and fry them until they're crispy. Yum. Not an everyday recipe, but so good.
And for an awesome presentation, you can lattice them on top of a casserole.

I also used to make these delicious roll-up lasagna noodles. Use spinach and whatever cheese you like - spread all on a lasagne noodle, roll it up and place in a casserole dish, pour alfredo sauce on it and heat in the oven.

You can also cut them in half lengthwise (to make thinner strips) and make a mushroom cream sauce, an olive-oil based vegetable primavera with lots of pecorino, or a mostly stew meat with some tomato sauce and cinnamon.

I love any leftover pasta tossed, warm or cold, with my favorite Italian salad dressing. Also good chopped up in a salad, lettuce, tomatoes and whatever other veggies you like.

Extra pasta freezes well and can be thrown into soups or veggies or casseroles. Don't throw them away.

I went ahead and froze them whole, until such a time I'm inspired lol.
