Simple but quick and tasty curry

Low calorie but yet filling and tasty curry

Ingredients:
100g of cooked chicken (Lakeland)
200g tinned chopped tomatoes (eastend (tesco) is least in sugar and cals)
1 large “red” onion chopped up
200g – 300g (depending on hunger) potatoes
Good amount of Tesco own make curry powder (I have medium but you can get mild)
Water

Optional Extras:
Tesco spicy (or mild) poppadum’s
{or} rice

Extra:
Large frying pan with lid
Mixing wooden spoon

Method:
1. Put chicken in pan on the heat to start defrosting with the tinned chopped tomatoes
2. Chop onion and potatoes into small pieces so they cook quicker
3. Add them to the pan
4. Pour over as much curry powder as you like and then add enough water so that all the potatoes and onions are submersed in water
5. Give a good stir
6. Bring to the boil and then cover with a lid and let simmer occasionally stirring until the water has reduced leaving a thicker tomato juice
7. Make sure potatoes are cooked and then dish up

Serve with (200 calories worth of rice/poppadum’s)
