I tried this bad boy out last night and it was delicious! Kind of like potato chips, the burt parts are the best parts so don't be scared to cook it longer.

You need:
Full head of cauliflower
2tbs Olive Oil
4 cloves of garlic
salt/pepper

Heat the oven 450
Cut your cauliflower so the pieces are about nickel to quarter size around, and the entire length of the stalk (or as far as it will let you)
Lay them out on a baking sheet, using a soft basting brush, brush on olive oil, don't use it all if you dont have to, just hit each piece so it's shiny. Dust in salt and pepper to your taste, I skipped the salt and use "Tony Chachere's Creole Seasoning" But don't think you need it if you don't have it. But its a GREAT seasoning.

Put in the oven for 15 minutes, start cutting your garlic as small as you possibly can, after 15 minutes flip. Once it's done separate into serving size of choice, and add some garlic on top.

384 calories

You can eat it all for a low-cal filling meal, or split it with someone and use it as a side.

I've always just done salt, pepper and olive oil and it's a family favorite. Love it. That and asparagus prepared the same way.

I think its from the olive oil - thats 240 calories right there. When I roast veggies I use my Misto, saves on a lot of oil calories! I haven't tried roasting cauliflower before, will check it out, thanks!

without wishing to pour cold water on all this I think you should be aware that burnt food is carcinogenic, & shouldn't really be eaten

vegetables should be steamed, sorry :-(
