Help with eating more low-carb calories?

I'm eating low-carb (PCOS with insulin resistance, but not diabetic... yet) and I'm gluten free. I eat mostly Paleo with some unsweetened Greek yogurt added in.
5'1, 116, 3 weeks postpartum after a 2nd trimester loss. I started to lose weight after the loss and I have been motivated to lose more. I was around 128 a day or so after the baby was born. I got on MFP to help count carbs, really, and I've noticed that I am unable to really get enough calories each day. Part of the problem is that I don't feel like eating or I'm not hungry, but I also feel like I need more snacks maybe, or something else.
I have pumpkin seeds and nuts and meat, perhaps I'm just burnt out on those things? What else can I do to add in calories. I like to have a smoothie for breakfast, but I wonder if there's something I can add in? I thought of coconut cream in my coffee, since I don't use any creamer anymore, to help add in calories. I am planning to bake some paleo muffins and granola as well, which might be helpful.
I am fully aware that there are likely psychological issues impacting the situation and affecting my appetite and possibly driving my desire to lose weight. Not looking for help in that area, thanks.

I don't see any mention of proteins in your diet, so I'd suggest
beef, eggs, chicken, seafood, etc. Also, natural fats like avocados and olive oil.0 -
I am so sorry for your loss - but I applaud your motivation.
Google "Bulletproof Coffee". I had been using coconut oil, but just ordered some MCT oil to replace it with. Mix it in with coffee and unsalted butter, and you have a nice breakfast that will easily last you until lunch. Its pure fat, but leave you with a lot of energy.
I also recommend cooking with Kerrygold unsalted butter. I used it for cooking meats, veggies and eggs in a pan on the stove. 1tbsp will add 100 calories to your day, and will help up your fat content.
Here are some snack ideas: cream cheese with celery, peanut butter with celery, chili flavored Wonderful pistachios (my fav!), beef jerky, boiled eggs, fresh berries (in moderation), cheese, deviled eggs, chicken and/or eggs salad, sugar free Jell-O, avocado, hummus (moderate carbs), almonds, cottage cheese (moderate carbs)0 -
The not being hungry is probably due to you eating so little you are slowing your metabolism so you aren't hungry. That isn't good especially if you want to lose you need to get the metabolism up.
I suggest Egg whites (egg beaters) higher calories and protein, lower fat. Also purchasing J robb or jillian michaels or even the generic target whey protein and mix with yogurt. Also consider cooking with almond and coconut flour and make sweet potato protein muffins, OR chickpea/honey and chocolate chip balls, 80 cal and lots of proteins. As well as adding healthy fats like avacado will help. Shrimp, tuna and fish have lots of protein as well and increase calories as well as roasted chicken.0 -
Don't decrease fat on a low carb diet. You need the fat. Eat whole eggs. Use butter.
I highly recommend that you get a book to help you learn how to follow the paleo diet properly. Borrow one from the library. I hear "Practical Paleo" and "It Starts with Food" recommended a lot.0 -
I'm sorry for your loss. With low carb I think you really have to concentrate on your protein and healthy fats. Use a high protein greek yogurt in your smoothies, add avocados, nuts and nut butters, hemp hearts are calorie dense as well I think in a 5 Tbsp serving they are around 300+ calories with 6 grams of carbs (3 of which are fiber).0
