Active Day job, active eveing job.... stalled weight loss.

Just wondering some opinions...

I lost a considerable amount of weight between 2 and 5 years ago - 85 lbs.

I have maintained this weight loss - but I would love loose about 15 more. Which would put me at about 150 lbs.

Problem - my weight loss seems stalled.
About the time I stopped loosing weight I had started teaching cycling (2-3 evenings per week). Since then, and a few job changes I have ended up working as a pool/aquafit instrucutor (not purposely with the thought that it would help me loose more weight, it is simply where my education, certification and full time offers lead me)
Thus, my day job is active - standing, walking or moving (demonstrating exercises) probably 75 -80% of the time.
None of the exercise I do or demonstrate at work is high impact - mostly low impact etc. I teach to seniors so even if I were going "all out" for them - its pretty easy for me.
I still maintain my own exercise outside of work and cycling - running, strength training etc.

I was doing CrossFit for awhile but had to quit because it was doing more harm than good - shoulder injury, insatiable hunger even though I was eating like a horse, body always achy, sleeping through alarm clocks etc. (if I sat around all day for my day job im sure it would have worked out better but a body can only handle so much)

In my settings I marked myself as "active" and fitness pal gives me 1600 cal a day for weight loss. I am wondering how correct this is or whether I should classify myself as "very active". Sometimes I feel like its alot, and other times not enough.

My life style now is SOOOOO different than my original weight loss (back then all i needed to do was move a little and eat better!) I feel like these last 15 are stuck and I have no idea how to get them off.
My eating is pretty clean - im the girl at work whose lunch everyone wants to know about all the time, evenly snacking through the day. Low on the bad carbs (stick to oatmeal, sweet potato, quinoa), low dairy (just a little plain greek yoghurt), always over my protien goals.

Anyone else work in an active job and find it hard to find a good weight loss cal balance????
