I would definitely shred it and make a big chicken and veggie soup. Get 2 big boxes of fat free lower sodium chicken broth, carrots, celery, fresh parsley, zucchini (whatever veggies you like) and toss it all in a big pot with the leftover chicken.0

Shred it and top a tossed salad to make a meal.0

Shred it, mix in a little Frank's Buffalo Wing sauce, put filling in a wrap with some lettuce, cucumbers, etc...maybe top with some greek yogurt mixed with a little of the dry ranch dressing mix0

chicken pie? Sandwiches? Straight up leftover chicken dinner? Soup/stew?
What I usually do when we have a bird with lots of leftovers is strip all the meat from the carcass and use that to make a stock (Okay husband makes stock - he makes the best stock)
. Then I'll use said stock to make a soup with the extra meat, which I usually divide in half. Half will be eaten as soup. The other half I thicken up with corn starch & water. and use that as a pot pie filling.
I usually just straight up freeze the pot pie to be eaten at a later date. Sometimes I freeze the soup too.0 -

Shred it and mix it with hummus and veggies (onion, celery, green pepper) and lemon juice. Eat it on a sandwich or some flatbread.
Shred it and mix it with plain yogurt, onion, celery, grapes, a sprinkle of walnuts, and seasonings (I like onion powder and garlic) for a healthy chicken salad.
Tacos- sprinkle the meat with cumin, garlic, and cayenne, Serve on corn tortillas topped with lettuce, tomatos, peppers, light cheese and light sour cream.0 -
Shred it and freeze it for later use if you don't want to use it now.0
