What to have for suppper?

HA! I apparently can't spell "supper"!

My husband is at work tonight and my kids will probably eat with their grandparents before I pick them up this evening so I need to come up with something quick, and filling for supper that's just for one. My eating plan consists of a protein, a green or fiberous veggie or low GI fruit, and a starchy veggie or bread, pasta, or rice. Around 300 calories would be great. Any suggestions?

    How about a quick stir-fry, shrimp or chicken, brocoli maybe, some brown rice, bamm dinner!!

    Grilled butterflied boneless skinless chicken breasts (herbed up) broil oven 4-6minutes a side.

    Steamed veggies.

    Pick a pasta.

    I made salmon patties last nite -soooo good & super easy!

    1 can of salmon, drained & deboned
    1 egg
    10 crushed lowfat saltines

    Mix well, patty up & fry in a little OVOO till both sides lightly browned.

    I had this w/ a cup of broc & cauliflower - about 340 cals.

    4 oz of rotisserie chicken on a whole wheat tortilla with a few slices of tomato and 1 tbsp of hummus and 1 cup of steamed brocoli.
