Spicy Peanut Noodles with Chicken

                    Hey all. I thought I would share with you a nice meal that I have made a couple of times. It is kind of a fusion of a couple different recipes that I have found online (since I can't ever seem to just stick to one recipe at a time). It has been a big hit with my boyfriend (but he gladly eats about anything I put in front of him!) and the nutrient breakdown makes it a nicely balanced meal. I serve it warm for dinner but I just had some cold leftovers and that was pretty good too (but the sauce thickens a bit).
Spicy Peanut Noodles with Chicken (makes 4 meal-sized portions)
6 oz (dry measure) whole wheat spaghetti noodles, boiled & drained (I used Garofalo brand and they were delicious.)
12 oz (raw) skinless boneless chicken breast, cooked in some low-fat way (poached, grilled, baked, etc.) and cubed
2 large green onions, chopped
1 large raw carrot, peeled and then peeled into 3 inch long, thin strips
2 cups broccoli, chopped & steamed
3 Tbsp natural creamy peanut butter
1 Tbsp honey
1 Tbsp low-sodium soy sauce
1/3 cup chicken stock (I used some of the homemade stuff in my freezer, but you could use bouillon or even just water.)
1-2 tsp Sriracha chili sauce (I can't remember how much I added the first time, but it was decently spicy. This last time I added just 1 tsp and it wasn't quite spicy enough for my tastes, so play around according to your preferences.)
1 tsp ground ginger (1 Tbsp fresh would be nice, but I didn't have any on hand.)
3 cloves garlic, minced
Throw the first 5 ingredients in a large bowl. Whisk the remaining ingredients together in a small bowl until smooth. Add sauce to the chicken/noodle/veggie mixture and toss until everything is well-coated.

            fantastic recipe. I have made a similar dish, only as a stir fry over wild rice or Soba noodles (Japanese buckwheat, very nutritious). My sauce is made with 1/4 cup Low cal Catalina dressing, 1/4 cup low fat/low sod chicken broth, 2 TBS low sod soy sauce, 2 TBS creamy peanut butter, and a dash of Asian chile sauce.
 I'll try yours for a change up.

 I haven't tried freezing it. It refrigerates fine. You might want to add a little liquid if reheating because the peanut sauce can get pretty thick when it cools. But I also like it cold (and sometimes I'm too lazy even to microwave something....).0
