Homemade Brown Rice Pizza Dough (w/mozza, mushrooms & swiss)

My fiance made this for dinner tonight. We were both a little skeptical to try but it was delicious!
With the toppings we used, 3 1/2 slices came out to 563 calories. He used The Laughing Cow creamy swiss light for some of the cheese and a low fat mozzarella sparingly for the other part of cheese. But it was flavorful and filling. We thought, a caprese, or pesto on tip of this crust would be excellent too.

Recipe for Brown Rice Flour Pizza Dough:

2 cups brown rice flour
1 tsp Himalayan salt (or you can use sea salt)
2 tsp aluminum free baking powder
1/4 cup e.v. Coconut oil (or e.v olive oil)
2/3 cup water (although I had to use more water than this. So if you need to add more water until it turns to dough)

Preheat oven to 420, use oil or non stick spray on a baking sheet or pizza pan, bake dough for about 10 minutes then add your toppings and then bake for another 10 minutes.
