drain the water out and squeeze it between paper towels
i love to eat it as it is, but a lot of people don't.
i like to slice it and saute it in cooking spray til each side is browned, then add it to a stir fry.
also is good diced up and thrown in a veggie soup.
marinate it in bbq sauce and cook it then add more bbq sauce and make a tasty sammich
can also be subsituted for egg and make a tofu scramble
store any leftover tofu in water, change the water daily (sounds like care instructions for a pet lol)

Dry frying is pretty much the best thing ever. Cut the tofu into quarter inch cubes or something, and cook it in a hot pan with no oil. The water will seep out and it will get all crispy and awesome. The you can marinade it and it'll soak up all the awesome flavors.

Baked tofu is also awesome and makes a great snack on the go! Again, marinade it (the longer the better) then cook on low heat for a while and it will get sort of jerky like.

Those are my favorite ways, anyway.

Also, protip, firmer is better. I always go with extra firm if I can.
