Guilt Free Homemade Marshmallow recipe (with protein)

Hello Fit Friends!
I have been playing in my kitchen this weekend and came up with this recipe.

INGREDIENTS
30 grams gelatine powder
30 grams of protein powder (I used vanilla ice cream gold standard whey protein isolate)
110 grams jar of baby food (I used vanilla custard flavour)
Pinch of salt
1 tablespoon honey
½ cup of fine desiccated coconut
METHOD
Start off with gelatine powder in a measuring jug
Add warm water to the 200 ml mark. My water temperature was 58°C (I really don’t know if that makes a difference but I made a note of it anyway!)
Add of protein powder.
Add baby food. I decided to use baby food as a source of sweetness to the recipe I hope you don’t think I am strange haha!
Add a pinch of salt and honey
Add 250 ml of boiling water
Add coconut
Get your electric whisker out and whisk on high to get as much air in to the mixture as possible. This part took FOREVER and I really doubted myself that it wouldn’t work because the mixture still looked clear and lumpy…
After a while, the electric mixer got really hot and I couldn’t feel my hand due to the vibrations and so I had to take a break (and despair that it was a failed recipe)
Pour the white mixture into a loaf tin lined with baking paper and leave uncovered at room temperature overnight
