Easy 347 calorie vegetarian fajitas.

This is one of my absolute favourite, everyday healthy recipes. The fajita mix is only 219 calories (the other 128 come from the tortillas I buy from my local supermarket). So you can reduce the amount of calories with a healthier tortilla or substitute, if you want to.
It also has the added advantage of being really cheap! So this is perfect if your on a budget and it only takes about 30 minutes to cook, or less with some practice.

Ingredients
vegetable oil, for frying
½ medium onion, chopped
1 tsp cumin
1 tsp ground cinnamon
2 garlic cloves, crushed
1 red chilli, finely chopped (or to taste)
1 tsp dried oregano
400g/14oz can chopped tomatoes
1 tbsp/15ml tomato purée
400g/14oz can red kidney beans, drained
400g/14oz mixed or flageolet beans, drained
½ red pepper, halved, seeds removed, sliced
salt and pepper
bunch fresh coriander, roughly chopped

To serve
wheat tortillas, rice, wraps- whatever you like best!

Method
1. Heat the oil in a large pan and fry the onion until softened. Add the cumin, cinnamon, garlic, chilli and oregano and fry for a few minutes more.
2. Stir in the tomatoes, tomato purée, beans and red pepper. Bring to the boil, then reduce the heat and simmer until the mixture is reduced and thickened. Add salt and pepper, to taste.
3. Stir the fresh coriander through the mixture just before serving.
