5 weeks..

I have 5 weeks until I go on holiday... the reason I started losing weight at the start of the year. I haven't been absolutely fantastic (but my motto is that life is too short). However, I have 5 weeks left and I want to completely maximise them to ensure I drop at least 5lb.
My weight at the moment is 73.3kg - goal weight is 65kg and starting weight was 78.2.
I know I have to eat at least 1,200 calories a day to avoid not losing due to starvation but also want to reduce amount of carbs (I am happy with 1 portion a day such as slice of toast or jacket potato etc). Also, is it a wise idea not to eat back calories from exercise? I tend to stick within my calorie goal of 1,200 atm and eat back my calories and as you can see not dropped that much weight.
I am also going to maximise my work outs - at least 2 hours on the cross trainer a week and squats/situps/press ups every day.
I need some help with food though - I do generally eat healthy in the week but I need more ideas of what to snack or use for dinners to replace carbs. I'm quite a fussy eater and don't have a huge amount of money to throw around. I work in an office and only usually have a quick breakfast - cereal or breakfast biscuits and a fruit tea as I am not a morning person!
So any ideas (meals and snacks) would be great. Also, any tips of how to maximise these 5 weeks would be great!
