How much do fat/sugar/etc. levels matter?

Hey guys! As I posted a few days ago, I'm trying to find a balance in my diet to maintain my current weight. I was wondering if you guys could give me some info about how fats and sugars and even proteins effect weight. For instance, if I eat 1200 calories in fruits, veggies and grains versus 1200 calories in cookies, is this going to change whether or not I'm maintaining my weight?
Of course I plan on moderating most days as a means of maintaining good health, but for my more "relaxed" days, I want to be able to make a mental note that more sugary foods don't burn off as easily, or whatever the case may be.
On a related note, I haven't been eating enough protein. What will happen once I start incorporating much more protein into my diet?

if u eat more protein you get full earlier.
1200 is 12 spoons of oil,
or 20 eggs...
Both are the same cals...0
