Steel-cut Oatmeal Recipes

I have recently discovered a love for steel-cut oatmeal. It is fantastic and very filling! Before this I found oatmeal to be absolutely repulsive. I made it for the first time, over night in the crock pot with a recipe I found on Cooking Light. It was basic, apples, brown sugar and topped with Hazelnuts. Does anyone else have any must try recipes for crockpot oatmeal that they would like to share?
