30 cal Basil Parmesan Peppercorn Dressing

I made this recipe for my boyfriend b/c he loves parmesan peppercorn...but I definitely can't have that on a regular basis! Lol. Anyway, here's the recipe (yields ~1 1/3 cups):

~ 2/3 cup 2% Cottage Cheese
1/4 cup Light Cream *
2 tbsp Unsweetened Almond Milk **
1.5 tbsp White Wine Vinegar
1/4 cup Shredded Parmesan
1 large clove garlic
Heaping handful of Fresh Basil
LOTS of ground pepper (maybe about 1.5 tsp)
Salt to taste

* You can use buttermilk, too. It's surprisingly low in calories.
** You can use regular milk if you have an allergy or just prefer that.

Just toss it all in a food processor and blend away until creamy. This recipe is really flexible...you can change the amount of cottage cheese if you like it thicker, or you can add more milk/cream if you like it thinner. I also added an extra clove of garlic, but I REALLY like garlic so...there's that.

You can keep the "base" of this (the cottage cheese + cream + milk) and make all kinds of different typically higher calorie dressings with it...like ranch, bleu cheese, etc!
