Cancun/Gluten intolerance/Hashimoto's

So, I have vacation in Cancun coming up in January, my last trip to Mexico I was so ashamed of my weight I barely wore shorts lets alone a bathing suit. I have a gluten intolerance, and Hashimoto's Hypothyroidism. I have struggled with my weight for about my whole life. Without starving myself, does anyone have some helpful hints. I go to the gym and do about 60 minutes of cardio 4 times a week, whether running, or on the elliptical. So any help is appreciated!
