What's For Lunch?

Lunch is the hardest meal for me. I bring my own food to work each day, and try to come up with interesting lunches. I'm getting pretty sick of the whole-wheat-wrap-with-turkey-and-hummus. Really good the first 5 times, but now I'm sick of it. Salads are great, but it seems the only dressing I like is my own, and it is not low cal or low fat.

What does everyone eat for lunch? I have the time, energy and drive to make it each morning. Just don't know what to put in the lunch box, and so called "nutrition bars" got me really, really fat!

    last night dinner!! (well technically 2 from nights ago) I eat a differents tuff for lunch. open diary.

    If nutrition bars got you fat then you are eating the wrong ones and probably not eating them as intended. (as in not working out or eating them *with* a meal instead of in lieu of)

    I squeeze lemon over my salad and put apple juice sweetened cranberries adn feta cheese in them. mmmm so good.

    also I like doing hardboiled eggs mixed with garlic, spicy mustard, spinach, tomato, onion and pepper wrapped in lettuce.

    is there a my fit foods in your area? I pick those meals up for lunch about three meals per week and eat leftovers the rest of the time. They are nice little pre-made meals that are fresh and have no preservatives or anything. They have everything- salmon, turkey, chicken, beef, vegan, enchiladas, salad, etc. and all are under 400 calories.

    I have a whole wheat turkey wrap with hummus or a salad with dressing that only you make.

    I eat a combo of veggies like corn, black beans, green peppers, red peppers, onions, and broccoli with some romaine and 2-3 oz of grilled chicken all topped with two tbsps of mild chunky salsa.

    I also keep the thin wheat bread (40 cals a slice) at work and sometimes throw my chicken into a sandwich...can put some tomatoes, cucumbers and maybe a little cheese.

    Spaghetti Squash with chunky marinara, broccoli and chicken! You can get creative with this.

    I'm going to start looking into good zucchini dishes .

    most often, leftovers.

    Or sometimes just a smoothie because I am not that hungry.

    I enjoy salad but it gets old after a while!
  • I try to make a big dinner early in the week so I can eat leftovers for lunch. This week was a batch of low fat black bean chili (I make it so one cup has 150 calories and I eat 2 servings- extremely filling for 300 calories!) Here are some other ideas I have made before that reheat well for lunch: You can also throw some on a salad for an awesome twist on traditional salad.

    Roasted vegetable stew- yummy and nutrutious and the leftovers are great.

    Zuchinni lasagna- use thin sliced zuchinni instead of noodles and use low fat/fat free cheese.

    Today I ate Aloo Gobi, a spicy Indian dish of cauliflower and potatoes that I made in my crockpot. If you have a crockpot, i'd recommend you make a pot of something that can be your "go to lunch" for most days. I ate this along with a matzo cracker and cucumbers.

    I usually eat leftovers for lunch. I make something on Sunday and the leftovers last me until about Wednesday. Then I pack a sandwich. Today, it was leftover chicken, oven roasted potatoes, and frozen string beans. I also always pack a spinach salad to go with lunch, and a yogurt and banana for a snack in the afternoon.

    I make egg salad with 1 hard boiled egg, about 1/4 avocado and a teeny tiny bit of mayo to pull it all together. I have that on a wrap or flat bread type thing, with a banana and I am VERY full!! Plus, it tastes like its not healthy ;)
