Sweet Tater Pumpkin Pie Protein Pancakes

I'm on contest prep for a bikini competition on June 1st, but today is a high carb day so I tried this out for pancakes this morning and LOVED THEM! Figured I would share :)

Sweet Tater Pumpkin Pie Protein Pancakes:
150g mashed sweet potato, no skin (about 5.3oz)
3 egg whites
1 scoop protein powder (vanilla, chocolate, cinnamon would work – I used pumpkin pie)
1 Tbsp cinnamon
½ tsp baking soda
½ tsp nutmeg
Dash pumpkin pie spice

Mix in a bowl, cook on medium heat. Can add walnuts or chocolate chips to batter after pouring onto skillet if you’d like

Macros (without toppings) work out to:
383 calories / 31g carbs / 42g protein / 6g fat
