i came up with this recipe yesterday when i threw together all the left-overs in my fridge to make a dinner. what i made was sort of a salad with all cold ingredients. it had kind of a mexican style. i will definately be making this again to use an easy-to-pack lunch!
here's what i used:
1/2 cup cooked quinoa
1/2 cup canned black beans
1/2 cup fresh salsa (chopped tomato, chopped green onion, fresh cilantro leaves)
1/2 fresh small avacado, diced
7 medium-size cooked shrimp, tail-removed, diced
combine all the ingredients and let cool in the fridge. eat shortly after or the avacacado and salsa will get bad.
