Asparagus Frittata

Made the yummiest frittata last night! Was supposed to be having dinner with my Grandma but she cancelled last minute so I had to whip something up quick for me and my son.

Serves 2 people
6 eggs, beaten
1/2 skinny milk
lemon pepper seasoning
6 spears asparagus, cut into 2cm lengths
1/2 cup green beans, cut into 2cm lengths
6 cherry tomatos, cut in half
2 rasher lean bacon, diced

Heat oven to 190
Beat eggs, milk and seasoning in a bowl
Add vegetable and bacon
Pour into oven proof dish and cook for 40 minutes


Super easy and super filling. I'm going to double the recipe on the weekend and freeze it into portions for lunches

    Based on your wording, I'm guessing you're in the UK somewhere.
    And you used celcius for the temp.

    190C = (approx) 375F

    MMM! That sound's good. I usually just cook mine on the hob on a low heat and finish under the grill. Going to try that combo!

    is skinny milk skim milk? and you said 1/2, is this 1/2 cup? also what is a rasher of bacon?

    A rasher is a slice of bacon

    And I'm about 98% sure that skinny milk is the same as skim milk
