For those who avoid grain, I made these cookies for a friend for her birthday yesterday and they were VERY good!! You could taste the PB, but it wasn't overwhelming like I feared it would be.
I can't remenber where I got this recipe, someones blog, sorry I cant give credit.. I forgot to save the link, I jsut emailed the recipe it to myself.
Grain-free Peanut Butter Chocolate Chip Cookie Recipe:
Ingredients:
1 cup Organic Creamy Peanut Butter (not the pre-stirred)
1/2 Cup Organic Raw Honey
1 Large Organic Pastured/Free Range Egg
1 teaspoon Baking Soda
1/4 teaspoon Sea Salt
1 cup Organic Dark Chocolate Morsels (80%+)
Parchment paper
Cookie Sheet
Preparation:
Preheat oven to 325°.
1.Stir together peanut butter and next 4 ingredients in a medium bowl until well blended. (Author said they used a stand mixer, I used my awesome new food processor with the dough blade and mixed batter a lot!)
Stir in chocolate morsels.
2. Drop dough by rounded tablespoonfuls 2 inches apart onto parchment paper-lined baking sheets.
3.Bake at 325° for 12 to 14 minutes or until puffed and lightly browned.
Cool on baking sheets for 5 minutes. Transfer to wire rack, and let cool 15 minutes.
Makes about 2 dozen cookies.
I entered the recipe in to the recipe builder on MFP and it was 126 cals, 12g carbs, 9g fat, and 3g protein per cookie.
I will probably make these again and when I do I am going to try to reduce the honey and see how they turn out... they were the sweetness level of a usual cookie, but I for me I'd like them a little less sweet. I'm also interested in trying it with Almond butter instead of peanut butter to see if it works.
Happy baking!
