Healthy covered dishes to take to gatherings

Hello , I have 2 covered dishes to make for June 8th . I have to take one to a lunch gathering and one to a Bon fire gathering . I need ideas on yummy healthy dishes I could take . Thanks in advance . Cindy

    #1 - Can of yellow corn, drained; canned black beans, drained; can of rotel, cilantro chopped, cumin to taste; mix all together.

    #2 - 1 cup finely chopped red onion, 1 cup finely chopped celery, 1 can shoepeg corn drained, 1 can lasure baby peas drained, 1 jar of pimento's chopped,1 cup vinegar, 1 cup water, sugar if neeed I never use it. Mix all together, better if it sits overnight.
