I haven't tried any of these recipes, but I have had a few varieties in wraps and they're pretty good, so I imagine the pizzas will be too. This actually has peaked my interest to give it a try this weekend :)

Once you form the dough, add cheese and other toppings you like

I make flatout wrap pizzas all the time! I love them (at least once a week). You can use low fat cheese, load up the veggies....they're so good.

Pizza sauce tends to have high sodium--you may want to consider using a few sliced or sun-dried tomatoes instead of sauce if cutting sodium is a goal.

Good idea on the sliced tomatoes. You can also make your own using low salt canned diced or crushed tomatoes. The Italian brands of tomatoes (e.g., Cento, or anything labelled San Marzano) are generally low in sodium as a matter of course. Just gently saute some crushed garlic in olive oil for a few minutes, add the drained tomatoes (important to drain them well to eliminate excess liquid), simmer 10 minutes or longer if you want a thicker sauce. Season with S & P, fresh herbs, etc.

ETA: I don't drain crushed tomatoes, just diced (or whole).

We had some bruschetta sauce from Trader Joe's that went unused since we bought it 4 or 5 months ago. Used it for the Flatout pizza, along with shredded mozzarella, grated parmesan, and anchovies. Very yummy. Those Flatouts are a great way to use up odd things cluttering up the fridge (like the anchovies).
