Needed: vacation meal ideas

I'll be on vacation to a cabin in the Rocky Mountains starting next week. =)

I need some simple, gluten/dairy free lunch and dinner ideas. I pretty much have breakfast and snacks taken care of with eggs, bacon, and fruit. I will have access to a kitchen but the nearest grocery store is about an hour away so the recipes need to have very few ingredients as I will be bringing most ingredients with me from home (in a cooler). I do love veg so any veggie ideas that will stand up to transportation and last about a week would also be appreciated!

    This may be my bias but get some fresh fruit and veggies and take them with you. There is a variety that don't have to be refrigerated and can be prepared easily. and taste great in combinations.

    thanks for the reply! I am planning to take plenty of portable snacks like fruit and nuts, but I'm just lacking in actual meal ideas...

    What about salads for lunch - just take your lettuce and salad fixin's with you. Will you have access to a grill? A piece of grilled meat and veg for dinner would be easy, and leftover meat you can use in your salad the next day.

    How about a pasta salad made with brown rice pasta, onions, red & green bell peppers, aritchoke hearts, broccoli, olive oil & balsamic vinegar. Make a big batch at home and pack it in your cooler. If you put it in a gallon zip lock bag it will take up less room. When you're ready to eat it, mix in a can of tuna, salmon or some chicken.

    And how about chicken kabobs? I like to cut up chicken breasts into chunks and skewer them with fresh pineapple, red bell pepper, red onion. Throw them in a freezer bag (use two bags to keep the skewers from poking through) and add your favorite marinade (be sure and include plenty of garlic and ginger)
