i'm looking for some dinner ideas for my quinoa. i usually just have it cooked up alongside something else, but i want to make it into a (maybe vegetarian?) main dish for dinner. the other protein sources i have on-hand to potentially add to it are - extra firm tofu, lentils, various beans, shrimp, egg, chicken, or lean pork. i am fairly open-minded when it comes to veggies and seasonings/herbs/spices.

I made White Bean and Quinoa soup the other night. The portions might need to be adjusted because I eat less at a time. http://www.myfitnesspal.com/recipe/edit/25639114
Also I like to use it as a rice substitute sometimes.
I made a quinoa and lentil salad
1/2 cup quinoa
1 cup vegetable broth
1/2 cup lentil
1/2 cup celery
1/2 cup carrots
( plus any other veggies)
1/4 cup onion
2 cloves of garlic
cooked the quinoa in the broth
sautee the onions and garlic
add the quinoa and stir
add all the veggies and let sit on low heat with top for a few minutes. We like our veggies crunchy so you may want to stem yours first.0 -

I also love marinating chicken breast in lemon juice and lemon pepper seasoning, baking it, and using that leftover broth to replace half the water in regular stove-top quinoa For example, I'm making 1 cup of quinoa, so I'll use 1 cup of water and 1 cup of that lemon chicken broth, put in on the stove, bring to a boil and let it cook on medium-low for about 15 minutes; I'll have quinoa, chicken and veggies when I make this, but usually I make extra so I can use that seasoned quinoa in any other dish0 -
My favorite way to make quinoa is....I roast bell peppers, onions, tomatoes, and garlic in some olive or coconut oil. Cook my quinoa, add lemon pepper, garlic powder, and a little salt. And then stir in the veggies. Doesn't have any added protein but beans would be good in it as a vegetarian option. Pretty simple I guess but I love it!0
