Aunt Jemina Pancakes

I made pancakes for my family this morning but the directions included, a table spoon of oil and milk. I only have whole milk for my family and wasn't keen on having the table spoon of oil also. So I modified the recipe as follows.

This whole recipe is 1 serving, which equals approx. 200 cals with sugar free syrup

1/3 cup of Aunt Jemina Pancake/Waffle mix
1 Tbsp. of egg substitute or egg whites or real scrambled egg
1/3 cup of unsweetened Almond Vanilla Almond Milk

I cooked with an olive oil spray in the pan.

Topped with sugar free syrup (Log cabin)

I got about 6-7, two inch pancakes out of this.

I can't wait for blueberry season to open up here, so I can make them with blueberries!

    I just add water. I never add milk and oil.

    This is one of my favorite breakfasts! I use the Complete Aunt Jemima (1/3 cup), and add blueberries. My secret ingredient is a dash of Lemon Extract, which I stir right into the mix. Is there anything nicer than lemon and blueberry? Love your user name--I was an XXL'er at this time last summer.
