Anyone try Lavender?

I purchased a Lavender plant and it's doing really well! I've had lavender in lots of things before so I know it's eatable! Has anyone grown their own lavender and used it in cooking? I'm just curious when to use it. I have had some of the flowers bloom and retract... I also have many unflowered buds just waiting until the time is right. Message me if you know more about this plant.

    There are plenty of recipes that use lavender.... cookies, etc.... I've tried it in food and don't care for it at all. :grumble: The taste seems like something that goes with soap and perfume, not food, but other people might like it.

    It's a really floral, perfume-y taste. I personally find it best with sweet things like scones, shortbread, tea cakes, loaves and makes for a great flavored sugar or sweet syrup, caramel or hard candy. I like it best paired with citrus which obviously lends itself to a lot of dessert preparations which you may/may not be looking for but I have steeped it in lemon juice before and added that to a garlic aioli and served it with roasted asparagus. You might be able to get more savory ideas by looking for recipes that use other flowers but keep in mind that things like roses and nasturtiums tend to have slightly peppery notes so recipes calling for saffron that use saffron for more than just coloring are going to be your best places to start.
