What are your favorite quick, healthy dinner meal recipes?

I find myself not having enough time to prepare a full dinner several nights a week, so I end up popping a Smart One in the microwave way more than I should.

What do you cook during the week that's quick, easy, and most importantly, healthy! I'm going shopping today so I need to stock my cabinets with this stuff for the week. Thanks!

    I like to make home made soups and stews. I make ahead and put servings in seal a meal so during the week I just drop the pouch into boiling water to heat, Fast, healthy, cheap and added bonus just the soup bowl and spoons to wash on work nights.

    I do a lot of my cooking on the weekend, then freeze single servings in Tupperware containers. Some of my favorites in the slow cooker - shredded bbq chicken or turkey breast, chicken cacciatore, turkey chili, white chili, taco soup, chicken ratatouille, balsamic chicken breast, salsa chicken. Skinnyms.com and skinnytaste.com have some great recipes.

    If I do need to cook a quick dinner on a weeknight, it is usually something like scrambled eggs or something on the grill.

    Also, whenever I grill chicken or turkey breast, I always make a few extra pieces but take them off the grill when they are slightly underdone. Then I slice and freeze individual servings which can later be quickly cooked/reheated on the stove or in the microwave and added to pasta or rice or a salad for a quick meal. I also chop most of my veggies on Sunday night, so they are ready to go as well.

    Keep experimenting until you find what works for you.

    the crock-pot is your friend! casseroles and stews are fantastic for time-savers. just toss everything in, turn it on, and go about your day!

    one of my favorite crock-pot recipes is chichen cacchiatore

    2 bell peppers, sliced into thin strips
    1 medium onion, sliced into thin strips
    2-5 cloves garlic, minced (depends on how much you like garlic!)
    6lbs chicken (i use leg quarters or thighs, after removing the skin!)
    *4 - 6 medium tomatoes, diced
    basil, oregano, parsley, salt, pepper (to taste)

    in a crock pot, spread out the peppers and onions on the bottom of the crock. place the chicken and garlic on top. mix tomatoes and seasoning and pour over chicken. low for 6-8 hours or high for 4 hours. serve over rice, spaghetti, or low-carb substitutes! enjoy!

    * you can use cans of crushed tomatoes to save time and mess...just reduce the salt you add in. :) also, this recipe is a great base to work with. you can add in any number of things, including: pepperoni, black olives, grilled aubergine, Italian sausage, mozzarella, spinach, pepperoncinis, tempeh, capers...so many flavor options!

    Steak and salad. Tuna steak and salad. For non dieting members of the family add potatoes.

    I also do braised dishes where I do a big batch on the weekend and freeze for weekdays. Things like Chicken Tagine, Coq Au Vin, Bolonese Sauce, Beef Stew.

    Buy a roasted chicken & take skin off. First day I eat thigh & drumstick as is with roasted veggies (prepare on weekend). Shred the rest into bite size pieces and put in ziploc bag in fridge for other meals. Use cold chicken in a salad with spinach, precooked (cold) asparagus, or other veggie, & mango or mandarin slices or juice of a fresh lime. With the sweetness of the fruit no dressing is needed - spritz of olive oil if want. If you prep a variety of vegetables ahead of time, whether roasting or just cutting into bite sized pieces, you'll save alot of time. I also make a batch of soup from either broccoli, caulifower, asparagus, or butternut squash and put them into 2 cup containers - good hot or cold.
