eggplant shepherds pie
1 1/4 red potatoes, halved
1/2 cup skim milk
1/2 cup parmesan
1 large onion
4 garlic cloves
1 tbsp curry
2 bell peppers (any color)
3 cups cubed eggplant with peel
1/2 cup water
2 tbsp olive oil, divided
1 15 oz can diced tomatoes
1 cup sweet peas, frozen or fresh
preheat oven 400 degrees
boil potatoes til fork tender
add parmesan, milk, salt and pepper smash, and set aside
while potatoes are cooking prep veggies
in large skillet heat 1 tbsp olive oil
add onion, garlic, and curry, cook 5 minutes and set aside
heat remaining olive oil in skillet
add peppers, eggplant, tomatoes, peas and water
cook 20 minutes, stirring occasionally
add onion mixture, stir
put contents in baking dish, top with potato mixture
bake 15 minutes
turn on broiler for a few minutes, until potatoes are golden brown
serve
serves 6
