Losing baby fat....again ;P

So, did this about 6 years ago and looked FABULOUS! I was fit, not skinny and felt awesome! So, my little one is almost 2 and I've hit my 160 lb plateau, yay! Lol. I'm 34 now and it's definitely MUCH harder to get into shape this time around! I started out at 192 and I'm down to 161 now. I don't know why but perhaps I'm not doing enough with eating? Maybe I'm cutting too many calories? I dunno, but help me out! Here's my stats:

161 lbs
5'6"
medium build
1,200 calories a day 40% carbs, 35% protein, 25% fat, 1,800 mg sodium
workout: 4 - 5 days a week @ 40-60 mins each. Running, running intervals, body combat, p90x & Supreme 90 videos.
