Mixed Berry Oatmeal Flax Muffins

A delicious and healthy muffin conconction I came up with. The spelt flour can be ommited for more whole-wheat flour if you have none on hand. I have already entered this recipe under the food database as 'Patty's 5-Berry Oatmeal & Flax Muffins'. Ingredients
3/4 cup quick cooking oats
1/4 cup ground flax seed
1 cups all-purpose flour
1/4 cup whole-wheat flour
1/4 cup spelt flour
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1/2 teaspoon salt
1 tablespoon baking powder
3/4 cup skim or fat free milk
1/2 cup vegetable or soya oil
1 egg
1 tablespoon of Vanilla Extract
1 cup mixed from-frozen thawed berries
Topping (optional)
1/3 cup quick cooking oats
1/4 cup brown sugar
1 teaspoon ground cinnamon
Directions
Preheat oven to 400 degrees F (200 degrees C). Lightly grease 12 muffin cups.
In a large bowl, mix the 3/4 cup oats, ground flax, all flours, all sugars, 1 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, salt, and baking powder. In a seperate bowl, lightly mix together the milk, oil, egg, and vanilla extract. Combine with dry ingredients until evenly moist. Fold in the thawed berries and its juices. Scoop batter into the prepared muffin cups.
Mix 1/3 cup oats, brown sugar, and cinnamon in a small bowl, and sprinkle over the batter. (Optional)
Bake 20 to 23 minutes in the preheated oven, let cool and ENJOY!
