Counting calories in oil when frying or roasting

I try to be as accurate as possible when counting cals, but when I occasionally fry or roast something and the majority of the oil is in the bottom of the pan I feel like my daily allowance is being poured down the drain.

Does anyone have any ideas about how to work around this?

    If you care to get painstakingly specific, you could measure what you put into the pan, then measure what is left when you're done, do the math, and assume the difference was absorbed.

    Or you can estimate, which is what I would do :)

    Weigh out the oil before and after? For example (completely random numbers), weigh out 100g of Oil that you plan on using to fry. When your food is finished, weigh it again. Let's say 45g of oil remains in the pot. Therefore, you know that you used 55g of oil in the frying process and can log it as such. Just an idea

    Be descriptive when searching for your food. Instead of making everything as a recipe, search for "deep fried chicken" or mushrooms sauteed in olive oil. Chances are there is a match somewhere in the MFP universe.
