French Fry Recipes?

I really like French fries, if they were healthy, I would be so fit ;) Every time I try to bake them, they either get burned and still seem hard and not soft like fries or are too mushy. Any tips how to make them nice and fry like?

    I remember one recipe says to soak them in sugar water or rinse the starch off....hmmm! Gonna have to find it again, then let u know

    Coat them in a little olive oil, and season them the way you like.
    (I like to use fresh cut sage) Cook at 400* for about a half hour,
    flipping them around the half way mark. Depending on the thickness
    of the fries cook times may vary.

    My favorite way to make "fries" is to cut into wedges, spray with nonstick cooking spray and season with garlic salt and parsley flakes. Broil on low and turn once to brown both sides - fanastic!

    This. I love oven fries like this. I usually just do the olive oil and salt to get them as close to regular fries as possible. I cut them in wedges like steak fries. They should be crispy on the outside and soft on the inside.
