Does todays meal plan sound alright??

Im in anorexia recovery and just wanted to know if todays meal plan sounds alright?
B: PB and J sandwich, 2 tbsp Peanut Butter, 1 tbsp Jelly, Yogurt, Coffee - 405
S: 2 graham crackers, 1 tbsp peanut butter, 1 cup almond milk - 410
L: 2 WW slices of bread, 1 tbsp mayo, Oven roasted turkey ham, 1 slice of cheese - 364 ( I did have some vegetables like lettuce, tomato, and some fruit like melon and avocado but didnt know the amount of calories so didnt count them in)
S: Almonds, 7 triscuit crackers - 300
2 homemade burritos ( Dont know what kind of meat it was but it was kinda greasy which didnt bother me, I dont know how much calories I had here but I did know that the 2 whole wheat flour tortillas were both each 120 calories, and i did put guacamole, cilantro and onions inside) So im just gonna guess and say i had maybe 540 calories?
As of right now I had 2,019 calories. MFP says i need to eat 2,300 calories to gain and I have 281 calories left over and i do plan on eating way more later on so I just wanna know is it safe if i go OVER 2,300 calories to maybe like 3,000 calories or more?
