Stuffed portabella mushroom. Good base for several ideas.

Ingredients:

44 calories 6oz Portabella (2-3)
90. calories 1/2 C. Light Classico Alfredo sauce
140 calories 1/2 C. Part Skim Ricotta
15. calories. 1/4 sweet onion
Garlic + salt and pepper to taste

Clean mushrooms and remove gills. Brush mushrooms with a tiny amount of Olive Oil. Dice stem and onion set aside. Mix all ingredients and split between caps. Bake at 425 for 20 minutes.

They are really good by themselves this way. But they are also a good base for added toppings. The healthiest was cooked spinach. But I have also added turkey pepperoni, sauce and shredded cheese. My favorite is shredded chicken breast in Franks buffalo wing sauce. It is a TON of food for not a lot of calories. Shredded chicken with BBQ sauce wasn't bad either.
