Roadtrip in the US- food help?

Hello everyone!
This monday I'll be leaving my small European cold bubble for a roadtrip to the US, however, I'm wondering about a couple of things.
I want to try eating as healthy as possible while I'm there, but knowing it's practically a fast food nation doesn't help. I know there's Subway, and maybe some other sandwich places that'll have good options, but I'm not sure if there's anything else?

Which other restaurants/chains have reasonable options? Thankfully neither me or my friends are fans of fast food (I don't even like fries or burgers with cheese, nachos and the like) but what are the actual italian restaurants like? Is Chinese as greasy as people say it is?

I'm planning to buy some Larabars or Quest bars for on the road as well, can you find them in every reasonably sized supermarket? Do American supermarkets also provide things like fresh salads or sandwiches to go? Hope some of you can help me out and give me some ideas here!
