Need advice on Kayaks!

Is anyone into kayaking? I am about to reach my first milestone on losing 50lbs. (yay!) My gift to myself is a kayak- maybe two if I can afford it so I can have friends come with me. I live next to a river, it is fairly calm- it is no lake but for a river it is calm. I need advice on what kayak to buy.
Here is my want list from a kayak. I realize all of these might not be possible- but that's why I am asking for your advice.:
1. Sit in kayak
2. weight capacity of at least 250, preferably higher
3. I will be using this mostly for fitness, secondary for leisure so I don't want it to be to stable. I want to work for it!
4. My overall budget is around $800-900, including the paddles and life jackets if possible
5. Since I am willing to buy two- I am okay with one being for "fitness" and one being for "leisure". In at least one kayak I would like a cargo space- I want to be able to pack a lunch so I can make a day of it.

If I buy them at the store- do they deliver them or do I have to transport them? I live right along the river so I would rather not buy something to attach them to my car if I can help it. Once they get to my house I don't plan on transporting them all over the place- just walk them the 20 yards to the river.
Any advice is GREATLY appreciated! I haven't kayaked since grade school so I am out of practice and out of know-how lol

Did you ever get into your Kayak?
I am 25o and I have two kayaks.
Both are Ocean "Sit on top" kayaks.
One is 11 ft and the other is 13 ft.
