I've already had breakfast, and I already have lunch covered but I have no clue what to make for dinner!

I have 482 cals, 154 carbs, and 20 sugars left. Any ideas that will leave me in that range?

That many carbs brings pasta to mind. Do you have any protiens available? If not, just have tomato and other veggies in a sauce on top of the pasta. Even a sprinkle of parmesan shouldn't hurt.

For 415cals you could have 2 of Matlaws stuffed clams (they're huge and very filling!) 1/2 cup of jasmine rice w/Challenge butter and a bit of garlic, plus a salad w/Caesar dressing (my dinner from two nights ago) :)

Omelettes are one of my faves for dinner. One egg and 3 egg whites and add whatever you like. Mushrooms, peppers, cheese, ham.....lots of possibilities.

How about a nice piece of salmon, grilled or baked with a little garlic, mushrooms, snow peas and tomato and maybe a little bit of brown rice or pasta? I don't eat meat anymore, but when I did, I loved to cook salmon, sometimes like above, and sometimes with a couple of thin slices of pear or a little shiitake sesame vinagrette instead of olive oil...
These days I like to grill portobella mushroom caps in a similar way!

We're having black bean taco's tonight. We use the corn hard shells and make salads. 3 shells equal 150 cals. load it up with salsa, lettuce, tomatoes..and just a smidge of sour cream (light of course)! Should fit in with your calorie count!

When I am making my grocery list I write the dinners on the bottom of the list. Then I post that on the fridge. Then I just look on the list to see my choices for dinner. I don't have to eat them in any order but I have done the list ahead of time so I can just refer to the list. My kids can also decide what they want on any night based on what is left on the list. This helps us eat at home also.
