    I have no idea what alfredo sauce is supposed to be, but this seems like a delicioius sauce to me. I shall be trying it soon.

    Alfredo sauce is supposed to be slightly thick, creamy, lush and cheesy but not in a nacho cheese way, more like the flavor of cheese only. White cheese like parmesan. It's made with parmesan cheese, heavy cream, salt pepper, and pasta water because that has the starch that thickens the sauce.

    This might taste really good to you since you don't know what the other version tastes like. As for those displeased with the mealy consistency might I suggest experimenting with other vegetables? Something with a little starch might not be bad since it helps the thickness as well. I'm sorry but this is not a recipe I would actually try and so could not offer my suggestions or experience for tinkering it to the right consistency because I am able to eat normal Alfredo sauce on my plan. Just not all day everyday. But I can have it. In fact I think I'll campaign to be taken to Macaroni Grill tonight for it.

    I like you:) I'm having Gorgonzola cream sauce tonight, over whole wheat noodles with salmon and broccoli. I prefer the real stuff.

    FYI: Alfredo is just butter and parm, so if you wanted to veganize it, guess just use vegan butter and cheese?
